Spaghetti Bolognese

1 onion, finely chopped
1 stalk celery, finely diced
1 carrot, finely chopped
1 clove garlic, minced
2 T fresh parsley, minced
2 T olive oil
1/2 lb ground beef, veal, or pork
. 1 Tbl butter
1 - 14 oz can tomatoes, pureed
1 Tbl sugar
Salt and freshly ground black pepper
1 lb spaghetti
Recipe
Heat the olive oil or shortening in a saucepan over medium heat. Add the vegetables and sauté ´ill onions are transparent and all the vegetables are soft. Add the meat and brown over medium heat. Add the tomatoes and 1 tablespoon butter. Reduce heat and simmer for 1 hour, stirring occasionally with a wooden spoon. Add the (optional) sugar and simmer another one hour, stirring occasionally. Cook the pasta and when ready, drain.Pour the sauce over the pasta.
