    2 lg. cans italian tomatoes, crushed
    1 (12 oz) can tomato paste
    4 cloves of garlic crushed
    1/2 cup basil leaves, chopped fine
    1/2 cup virgin olive oil
    1/2 cup romano chees, grated
    1 dash of sugar
    1 tsp salt
    1 tablespoon coarse ground black pepper
    1 (8 oz) can stemmed mushrooms,drained
    1 green bell pepper, cleaned washed and diced
    2 lbs. pork ribs, separated (bake on boiler pan for 1/2 hour in preheated oven at 350 degree, set aside)

    Give yourself 3 hours to cook and simmer this great topping for your favorite pasta.

    In a large saucepan place olive oil in first and heat on moderate stove (or medium flame). Add garlic and saute till light brown. Put preheated pork ribs in and stir completely with wooden spoon. Add 2 cans (large size) of crushed tomatoes and 1 can (large) of paste. Scoop out paste with teaspoon, then add warm water to can. stir viorously, then also add this to saucepan. While still stirring, bring up heat to medium high and just when you notice hot bubbles on surface, add basil, cheese, salt, peppers and mushrooms. Turn heat down to medium-low and simmer for two hours, stirring completely with wooden spoon every 15 minutes. Reduce heat to low and cover saucepan for a third hour. Always remember, never let sauce boil for long periods. Turn down heat slightly and stir frequently. When done, remove bones of the ribs and discard with tongs carefully. Remove mear and put back in sauce. ENJOY!
