    1 tablespoon butter
    1 tablespoon olive oil
    1 large green pepper
    1 large yellow onion
    3-4 regular tomatoes or several Roma tomatoes
    1 package canned biscuits
    salt, pepper and sweet basil to taste
    1 cup Miracle Whip salad dressing or mayonnaise
    1 cup Monterey Jack cheese, grated
    Mushrooms and other vegetables can be added to saute if desired

    Preheat oven to 350 degrees. Grease pie plate with cooking spray or olive oil. Spread biscuit dough on bottom and up sides of pie plate to form a crust. Melt butter in large saute pan, add olive oil and cook sliced onion and green pepper, stirring until onion is translucent and limp. Do not burn the onion. Add salt, pepper and sweet basil. Layer bottom of pie crust with sliced tomatoes. Add the sauteed pepper and onions and cover with another layer of sliced tomatoes. Mix Miracle Whip or mayonnaise and cheese in bowl and spread over top of vegetables in the pie crust, creating a “meringue.” Bake for 55 minutes. Place foil beneath pan as it may spill grease into oven. Remove from oven. Let stand for 5 minutes and slice. This is a superb side dish with barbecued steaks or chicken.
