    1 cup grated Parmesan cheese
    4 eggs separated, whites for binding
    2 cups flavored bread crumbs

    FILLING
    1/2 cup tomato sauce
    1/2 lb. ground chuck
    1/2 tsp. garlic (fresh of powder)
    1 cup peas
    salt/pepper to taste
    1/2 cup extra virgin olive oil

    Recipe



    Saute chop meat, break up well. Add garlic, salt, pepper, 1/4 cup sauce and peas. Simmer gently about 10 minutes. While mixture is cooling; add cheese and egg yolks to rice. Add remaining sauce a little at a a time and just enough to add a little color to rice. Mix well. Shape into balls about the size of a small orange. Poke a hole in center and insert about 1 tsp. of filling. Pat ball with unbeaten egg white then roll in bread crumbs. Heat oil in deep frying pan and gently fry balls to a golden color. Drain on paper towel. Enjoy while nice and hot.
