    Fettuccine With Cilantro Pesto Sauce

    1 pound fettuccine
    1 can (about 16 ounces) black beans, rinsed
    1 can (11 ounces) Mexican-style corn, drained

    For Pesto:
    2 cups fresh cilantro
    2 cups fresh parsley
    1 can (4 ounces) green chilies, drained
    1/3 cup unsalted roasted peanuts
    1/4 cup fresh lime juice
    2 tablespoons olive oil
    1 tablespoon bottled chopped garlic in oil
    1/2 teaspoon ground cumin
    1/2 teaspoon salt

    Recipe



    1. Cook pasta

    2. Meanwhile, puree Pesto ingredients in food processor until smooth. With processor running, gradually add 1/3 cup pasta cooking water.

    3. Drain pasta, return to pot and add pesto, black beans, and corn. Toss to mix and heat through.

    Yield: 6 servings
