Italian Meatballs w/ a Secret Ingredient

1 pound ground chuck
1/2 pound ground veal
1/2 pound ground pork
1/2 cup chopped flat-leaf parsley
1/2 cup milk
1/4 cup grated Parmesan cheese
1/4 cup flavored dry bread crumbs
2 cloves garlic, crushed
2 teaspoons salt
1/2 teaspoon coarse pepper
2 eggs, slightly beaten
1 pound mozzarella cheese
1/4 cup vegetable oil or olive oil
Tomato-based pasta sauce
Hot cooked spaghetti
Recipe
In large bowl, combine ground chuck, ground veal, ground pork, parsley, milk, Parmesan cheese, bread crumbs, garlic, salt, pepper and eggs. Mix well. With moistened hands, shape mixture into 1 1/2-inch meatballs. Makes 12.
Cut mozzarella cheese into 12 cubes. Insert 1 cheese cube into center of each meatball.
In skillet, heat vegetable oil. Sauté meatballs until browned. (Cook a single layer at a time.) Add meatballs to pasta sauce. Cover and simmer for 30 minutes.
To serve, mound meatballs in center of large platter. Surround with spaghetti. Pour pasta sauce over all. Sprinkle on additional grated Parmesan cheese, if desired.
