    Linguini With Scallops

    1 lb. linguini
    1 lb. sea scallops, halved
    7 Tbsp. Olive Oil
    5-6 strips bacon
    2/3 cup chopped red onion
    1 lg. sweet red pepper, cut into thin strips
    4 cloves of garlic, chopped
    1/4 tsp. crushed red pepper (more if you like it spicy!)
    2/3 cup shredded Parmesan

    Recipe



    Cook bacon in large skillet over medium heat until browned. Drain on
    paper towels and slice crosswise into thin strips. Discard grease and
    wipe out skillet.

    Heat oil in skillet over med heat, add onion, saute 5 min. Add garlic,
    Sweet Red Pepper and Crushed Red Pepper. Saute 3 minutes more.

    Add scallops, saute on med-hi for about 3 more minutes or until just
    cooked through. Add reserved bacon strips.

    In the meantime, cook linguini for about 12 minutes, or until "al
    dente", (slightly firm to bite.) Drain, and toss with scallop mixture.

    Serve with the shredded Parmesan in a dish on the table, and fresh
    ground Black Pepper so everyone can add their own to taste!
