    4 lbs. zucchini (sliced 1/4
    Parmesan grated cheese
    bread crumbs
    1/2 cup mint leaves, chopped
    red wine vinegar, as needed to sprinkle on each layer
    extra virgin olive oil

    Recipe



    Use oval serving platter, sprinkle with vinegar. Fry zucchini slices in extra virgin olive oil until brown. Place single layer in dish. Sprinkle with mint leaves, grated cheese, and vinegar. Sprinkle bread crumbs lightly on top. Repeat in layers. Refrigerate-take out 2 hours prior to serving. Serve with crackers.
