    Spaghetti Squash with Tomato

    1 spaghetti squash
    1 medium onion, chopped
    1 large clove garlic, finely chopped
    2 tbsp olive or vegetable oil
    4 medium tomatoes, chopped
    1/2 tsp salt
    1/4 tsp dried oregano leaves
    1/4 tsp dried basil leaves
    1/8 tsp pepper
    2 tbsp margarine or butter
    1/2 cup grated cheddar cheese

    Cut squash in half lengthwise. Remove seeds. Place cut side down in large baking dish. Cover.

    Bake at 400 degrees F 30 to 40 minutes or until tender.

    Cook onion, green pepper and garlic in oil in saucepan over medium heat about 5 minutes, stirring occasionally, until onion is tender.

    Stir in tomatoes, salt, oregano, basil and pepper. Simmer uncovered, stirring occasionally about 5 minutes.

    Remove squash strands with two forks and place in bowl. Toss with margarine and cheese. Spoon tomato mixture over squash. Serve immediately.

    Servings: 6
