Trapani-style Stuffed Mushrooms

18 medium-size mushrooms
3 garlic cloves, finely chopped
1/2 cup extra virgin olive oil
1 egg, beaten
1/2 cup Parmesan cheese
1/4 cup parsley, chopped
1 lemon
1 onion, finely chopped
6 anchovy fillets, chopped
salt/pepper
1/2 cup fresh bread crumbs,(trim crust, soak in milk)
1/3 cup fine dry bread crumbs
Recipe
Wipe the mushrooms clean with a cloth, but DO NOT WASH them. Cut off and chop the stems. Combine onion, garlic, anchovies and mushroom stems in skillet. Add half the oil and cook over medium-high heat for 10 minutes, stirring. Remove from heat and season with salt and pepper. Let the mixture cool, then add the egg, bread, parmesan cheese, and parsley and stir with a wooden spoon until well blended. Fill the mushroom caps with this mixture and sprinkle with bread crumbs. Preheat oven to 350 degrees. Brush a little extra virgin olive oil on the bottom of baking pan and arrange mushroom in it. Sprinkle with remaining extra virgin olive oil and bake until crumbs are golden, about 20 minutes. Squeeze a few drops of lemon juice over each and serve.
