    • 2 cups sugar
    • 1/2 cup lemon juice
    • 1 tablespoon lemon zest
    • 6 ripe medium bananas, peeled and sliced into 1/4-inch rounds

    In a large non-reactive bowl, stir together the sugar, lemon juice, and lemon zest until the sugar dissolves. Fold in the banana slices until evenly coated. Cover the bowl with plastic wrap or foil and let the bananas marinate at room temperature for at least 1 hour.

    Place the bananas and marinade in a saucepan. Bring to a boil, stirring frequently to break up the bananas. Reduce the heat to very low and simmer, uncovered, for 30 minutes, stirring occasionally. The jam should be very thick. Immediately ladle the jam into an airtight container and refrigerate.

    Yield: about 3 cups
