    Maple Syrup Onion Marmalade

    8 oz. small brown onions (Anyone know what a brown onion is?)
    2 Tbsp. olive oil
    1 clove garlic, thinly sliced
    2 Tbsp. pure maple syrup
    3 tsp. fresh rosemary leaves or 1 tsp. dried
    2 Tbsp red-wine vinegar
    salt to taste

    Recipe



    Halve the onions and cut into thin wedges. Place onions, olive oil and garlic in medium saucepan over low heat.
    Cook uncovered stirring occasionally for 25 minutes or until soft. Add maple syrup and increase heat to medium. Cook uncovered stirring occasionally for 15 minutes or until soft. Add rosemary and cook for another 5 minutes or until onions are sticky and brown. Stir often to avoid sticking to bottom of pan.
    Stir in vinegar and salt. Remove from heat, cool.
