    Low Fat Pasilla Turkey Chili

    2 tbsp. olive oil
    2 c. medium diced white onion
    2½ lbs. ground turkey breast
    ¾ c. ground pasilla chile (find in Mexican or specialty supermarkets)
    2 28 oz. cans diced tomatoes with juice
    2 c. clarified chicken stock
    4 tbsp. Mexican oregano
    2 tbsp. ground cumin
    1 tsp ground white pepper
    1 tbsp. ground black pepper
    3 tbsp. salt to taste

    Recipe



    Use heaviest pot if possible for even heat distribution. Saute onions in olive oil until translucent. Add ground turkey and lightly brown while stirring frequently. Add all other ingredients and stir to fully incorporate. Bring to low boil for 3 minutes. Turn heat down to medium simmer and cook for ݢ to 1 hour skimming any fat that rises to surface. Stir frequently. Optional: add 3 tbsp. cocoa powder with other ingredients. Serve hot in earthen bowls topped with shredded cheddar, Monterey Jack, and diced green onion
