    1 1/2 lbs. ground beef
    1 tsp. salt
    1/8 tsp. black pepper
    1 tbsp. chopped parsley
    4 thinly sliced onion rings
    4 thin slices tomato
    4 thin slices Cheddar cheese
    4 tsp. Dijon-style mustard
    4 tsp. pickle relish
    4 tsp. mayonnaise
    4 crisp lettuce leaves
    4 lg. hamburger buns, toasted, buttered

    Mix well with the salt, pepper and parsley. Divide into 8 portions. Flatten each portion out to make rounds 4 to 5 inches in diameter. Top each of 4 patties with 1 slice onion, 1 slice tomato, and 1 slice Cheddar cheese. Top the matching patties with 1 teaspoon mustard, 1 teaspoon relish and 1 teaspoon mayonnaise. Place the relish patties over the other patties, carefully enclosing all the relishes on the inside. Press out any air bubbles and seal edges well. Broil or grill until done to your liking. Top with lettuce and place into prepared hamburger buns. Serve immediately.
