    2 8 oz. pork cutlets
    2 oz. clarified butter
    1 c. sliced shittaki mushrooms
    1/4 cup sliced scallions
    3 oz. brandy
    8 oz. heavy whipping cream
    3 oz. stone ground mustard
    1 tbsp. fresh horseradish
    to taste fresh ground pepper and salt

    Heat clarified butter in sauté pan. Sauté pork cutlets turning once until medium rare. Remove from pan and reserve in a heated oven. Add mushrooms to pan and begin to soften. Add brandy to pan carefully, ignite brandy to burn off alcohol and add whipping cream and heat until a light boil is reached. Cream will reduce and thicken. Return pork cutlets to saute pan and finish cooking as sauce finishes thickening. Sprinkle with scallions and let rest while plating the rest of the meal.
