    2 tsp. Cumin spice
    2 tbsp. Chili powder
    2 tbsp. Coriander spice
    2 tbsp. Kosher Salt
    4 tbsp. Sugar
    1 tsp. Black Pepper
    4 - 7 oz pcs. Pork Tenderloin

    Combine spice mixture and rub liberally over pork. Let stand for 1 hour and then give a quick rinse. Mark on the grill and finish roasting in oven until desired temperature.

    Chinatown BBQ Sauce
    4 cups Pork Stock
    4 tbsp. Kimlan Chili sauce
    1 tbsp. Sesame Oil
    2 tbsp. Brown Sugar
    as needed Corn Starch
    to taste Salt
    to taste Pepper

    Combine all ingredients and reduce down to 2 cups. Thicken with cornstarch if necessary.

    Pork Stock
    5 lbs. Pork Bones
    1/2 lb. Carrots chopped
    1 ea. White Onion med. chopped
    1 ea. Celery Rib chopped
    1 sprig Rosemary
    1/2 cup Tomato Paste
    1/2 cup Garlic cloves
    1 tbsp. whole Black Peppercorns
    1/2 cup Red Wine
    1 qt. Veal Stock

    Roast bones at 350° degrees for 1 1/2 hrs. Add carrot, onion, celery and tomato paste, mix together and place over bones. Continue to roast for 30 minutes more. Place all ingredients in a stock pot and simmer for 4-6 hrs. Strain and reserve liquid.
