    garlic cloves used: 4

    brisket strip, first cut, 1-1/2 pounds
    olive oil
    2 pounds yellow onions, sliced
    fresh coarsely grated black pepper
    4 or more cloves of coarsely chopped garlic, peel can be left on

    Recipe



    Preheat oven to 450°F.
    Place sliced onions in baking dish large enough to hold brisket.
    Combine chopped garlic, olive oil and black pepper; coat the brisket with them.
    Bake at 450°F for 20 minutes.
    Lower temperature to 350°F and bake 45 minutes.

    Let cool and slice thinly across the grain.
    Good hot or cold. Can be prepared frozen; lengthen baking time accordingly. Allow 1/4 pound per person.

    Larger, even whole, brisket can be roasted. Just add 15-20 minutes per pound. For a whole brisket , maximum baking time should be 2-1/2 hours, regardless of size. Increase olive oil, garlic and black pepper accordingly.
