    1/2 pound sliced bacon
    1/3 cup red wine vinegar
    1/3 cup mayonnaise
    3 tablespoons olive oil
    1 tablespoon minced onion
    3/4 teaspoon salt
    1/4 teaspoon freshly ground pepper
    12 ounces pappardelle pasta
    1 pint cherry tomatoes, quartered
    1/4 head iceberg lettuce, shredded

    Recipe



    1. Cook bacon in a large skillet until crispy. Drain on paper towels and
    crumble. Whisk 1 tablespoon bacon fat in a bowl with vinegar,
    mayonnaise, olive oil, onion, salt, and pepper until well blended.

    2. Cook pasta according to package directions. Drain. Toss with
    vinaigrette, bacon, tomatoes, and lettuce. Makes 4 to 6 servings.
