    3/4 lb spaghetti
    1/4 c olive oil
    3 med red or yellow bell peppers, cored, halved and thinly sliced
    2 c sliced red onion
    2 tsp minced garlic
    2 T fresh thyme
    Salt to taste
    1 1/2 c shredded gruyere or provolone cheese
    Hot red pepper flakes
    Grated parmesan cheese

    1. Cook spaghetti in a large pot of boiling, salted water for 8 minutes, stirring often, until tender but still firm.

    2. Meanwhile, heat oil in large skillet. Saute peppers and onion for 5 minutes until softened.
    3. Add garlic and thyme; toss for 1 minute until fragrant.
    4. Season to taste with salt.
    5. Drain spaghetti; return to cooking pot.
    6. Add cheese and toss to melt cheese.
    7. Add pepper-onion mixture; toss to combine.
    8. Serve garnished with hot red pepper flakes and parmesan cheese at the table.
