    Tortellini Pepperoncini Salad

    1 package (9 ounces) fresh cheese tortellini
    2 cups halved cherry tomatoes or grape tomatoes
    2 cups fresh spinach leaves, washed, tough stems removed, coarsely chopped
    1/2 cup chopped pepperoncini peppers (stems and seeds removed)
    6 tablespoons (1 1/2 ounces) shredded Parmesan cheese
    1/4 cup capers, well-drained
    1/4 cup chopped fresh basil
    1 can (16 ounces) navy beans or favorite white beans, well-drained
    2 tablespoons fresh lemon juice
    1 1/2 tablespoons fruity olive oil

    Recipe



    Cook the tortellini according to package directions, omitting salt and fat. Meanwhile, in a large serving bowl combine the tomatoes, spinach, peppers, cheese, capers, basil and beans.

    When the tortellini is cooked, drain well and rinse with cold water. Add the tortellini, lemon juice and olive oil to the tomato mixture, toss gently and serve. Serve this warm or cold.
