    Artichoke and Red Pepper Pizza

    1 large pre-made thin pizza crust
    1 3-ounce package grated Parmesan cheese
    1 6-ounce jar marinated artichoke hearts, drained and chopped
    1 6-ounce jar roasted red peppers (use about 1/2 cup peppers, thinly sliced)
    extra-virgin olive oil

    Recipe



    Place the pizza crust on a pizza pan. Sprinkle the Parmesan cheese evenly over the crust. Top with the chopped artichoke hearts and 1/2 cup sliced roasted red peppers. Drizzle olive oil over top.

    Bake the pizza in a 450 degree oven (middle rack) for 8 to 11 minutes. Serves 4.

    Option: For added flavor, use freshly grated Parmigiano-Reggiano in place of pre-grated packaged Parmesan cheese.
