    2 lbs. cut-up chicken - with the skin removed
    1 small can (10 1/2 oz.) cream of mushroom soup
    3/4 cup milk
    1 Tbsp. finely chopped onion
    1 Tbsp. parsley
    1+ cups plain bread crumbs
    2 Tbsp. melted butter

    In shallow bowl mix the soup, milk, onion & parsley. Dip chicken in the soup mixture, then roll in bread crumbs. Spray cookie sheet with non-stick spray. Place breaded chicken on cookie sheet. Drizzle melted butter over chicken. Bake at 350 degrees for 45 - 60 minutes until chicken is golden brown.

    ** Fat-free cream of mushroom soup, skim milk and low-fat margarine can be substituted in this recipe. It's still delicious!

    Serves 6
