    Crisp Sweet Pickles

    7 pounds medium-size pickles (cucumbers), cut into small slices

    Day One:
    Make Brine of:
    1 pint salt to 1 gallon water
    Put pickles in brine for 5 days. Cover with weight, stir daily

    Day 6:
    Drain and soak in clear water for 2 days

    Day 8:
    Drain and cover with boiling water and 2 Tablespoons alum (dissolved)

    Day 9:
    Drain and cover with boiling water, let stand, cool, and drain
    Make syrup and pour over pickles while hot

    Syrup:
    6 pounds sugar
    3 pints vinegar
    4 teaspoons whole mixed pickling spice
    4 teaspoons celery seed

    Day 10:
    Drain, heat syrup and pour over pickles again
    Day 11:
    Drain, heat syrup, put pickles in small jars, cover with hot syrup and seal jars immediately.
