    Cheddar and Bacon Potatoes

    2 large baking potatoes
    4 Tbsp. (1/2 stick) butter
    Salt and pepper
    3 slices bacon, crisply cooked and crumbled
    1 small tomato, seeded and diced
    2 medium-size green onions, minced
    2/3 cup grated sharp cheddar cheese

    Recipe



    Cook potatoes in microwave on High until tender, about 12 minutes.

    Make crisscross slices in top of each potato and push open. Add 2 Tbsp. butter to each potato and mash well with fork; sprinkle with salt and pepper.

    Divide bacon, tomato and green onions between potatoes. Top with cheddar cheese. Microwave on High until cheese melts.

    Serves 2.
