    Lemon Roasted Greek Potatoes

    2 large potatoes
    2 tbsp olive oil
    ¼ c lemon juice
    ½ c water
    ½ tbsp instant chicken stock mix
    1 tbsp oregano

    Recipe



    Pre-heat oven to 350º F. Peel potatoes, rinse, and cut into medium sized chunks. Place potatoes in a large casserole dish and drizzle with olive oil. Toss to coat. Dissolve the instant chicken stock mix in the water. Pour the lemon juice and chicken stock over the potatoes and toss well. Add oregano and toss again.

    Cover and bake for 20 minutes. After 20 minutes, remove cover and continue roasting, basting frequently, for 15 - 20 minutes or until potatoes are tender when tested with a fork. Serves 2.
