    List of Ingredients




    2 T. butter
    3 T. vegetable oil
    4 russet potatoes, cubed (5 cups)
    1 onion, finely chopped (2/3 C.)
    1 green pepper, chopped 3/4 C.)
    1/4 C. roasted red pepper or pimento, chopped
    1/4 C. minced fresh parsley
    salt and freshly ground pepper to taste
    few grains cayenne
    freshly grated Parmesan cheese

    Recipe



    In a large heavy skillet, melt butter and shortening, add potatoes, and cook until light brown and tender but firm.
    Add onion and green pepper, and cook 2-3 minutes. Add red pepper, parsley, salt, pepper and cayenne.
    Toss lightly.

    Transfer to serving dish, and sprinkle with Parmesan cheese, if desired.

    Serves 4-6.
