    Maple Ginger Sweet Potatoes

    3 pounds of sweet potatoes, peeled, quartered
    6 tablespoons of butter, cut into small pieces
    1/4 cup of packed brown sugar
    1/4 cup of maple syrup
    3 tablespoons of crystallized ginger, chopped
    3/4 teaspoon of salt
    1/2 teaspoon of pepper

    Preheat your oven to 425ºF. In a large pot over high heat, bring the potatoes and enough water to cover them to a boil. Reduce the heat to medium, cover and simmer for 20 minutes or until tender.
    Drain. In a greased 2 quart baking dish, combine the potatoes and remaining ingredients. Cover with foil and bake for 20 minutes. Uncover and bake for 20 - 25 minutes more or until golden brown.
    Makes 8 servings
