    Ranched Up Twice Baked Potatoes

    1 tablespoon olive oil
    2 large baking potatoes
    1 packet Original Ranch Salad Dressing Mix
    1 cup sour cream
    6 springs green onion, chopped
    1 package (8 ounces) shredded Colby-Jack cheese
    1 package (3 ounces) Oscar Mayer Real Bacon Bits

    Rub oil on skins of potatoes and then bake potatoes in oven (400 degrees for 1 hour) or in microwave 10-15 minutes turning once) until just done. Cool enough to handle.

    Preheat oven to 350 degrees. Cut each potato in half length-wise and use a spoon out the flesh into a large bowl and save the skins. To the potato flesh, add all remaining ingredients except 1/3 cup cheese, 1/4 cup green onion and a 2 tablespoons bacon bits for topping. Spoon mixture into potato skins. Top each with remaining cheese, green onions and bacon bits. Bake uncovered in a shallow 9x13 baking dish for 15 minutes or until cheese is melted and potatoes are heated through.

    Transfer to a serving dish and enjoy. Makes 4 servings.
