    Chicken Rice Artichoke Salad

    1 pkg. chicken-flavored rice
    1/2 cup chopped green pepper
    1 (6-oz.) jar marinated artichoke
    hearts, drained and marinade
    reserved
    4 green onions, chopped
    8 stuffed green olives, chopped
    1/3 cup best-quality mayonnaise
    1/2 tsp. curry powder

    Prepare rice according to package directions. (Cook rice in chicken or vegetable stock instead of water for additional flavor.) Set aside and let cool. Add vegetables to the rice. Thoroughly combine reserved marinade, mayonnaise and curry. Add to rice mixture and stir to combine. Cover and refrigerate several hours or overnight.
    ? If you want to get wild and crazy, add several grilled chicken breasts, cut into strips, or 1 pound of cooked shrimp to make the dish an entrée, perfect for a luncheon or light supper.
