    GARDEN POTATO SALAD W/HAM

    1&3/4 lbs red (tiny) potatoes
    2/3 C chopped carrot
    1 med zucchini, cut to bite size
    2&1/2 C ham, cooked & cubed
    2T green onions, thinly sliced
    1&1/4 C mayonnaise or salad dressing
    2t sugar
    2 celery seed
    2t vinegar
    2t prepared mustard
    2 hard cooked eggs, coarsely chopped

    Recipe



    Cook potatoes in boiling water 12-15 minutes. Drain and slice.
    Cook carrot in boiling water for 2 minutes. Add zucchini, cook 2 minutes. Drain.
    Combine potatoes, carrot, zucchini, ham and onion.
    Stir together mayonnaise, sugar, celery seed, vinegar, mustard and 1/2 t salt.
    Pour over potato mix.
    Toss lightly. Carefully add chopped eggs.
    Cover and chill 4 hours or overnight.
