    2 T rice vinegar
    1 T mayonnaise
    1 T sugar
    1/4 t Tabasco sauce
    1/4 t salt
    2 cups shredded cole slaw mix from 16 oz. bag
    1/2 cup shredded carrots
    1/2 cup thinly sliced red onion
    2 T cilantro leaves
    4 skinless, boneless chicken breast halves 1 and 1/4 lb.
    1/2 cup spicy barbecue sauce, divided
    4 hamburger buns

    In a medium bowl, combine rice vinegar, mayonnaise, sugar, tabasco and salt. Toss in coleslaw, carrots, sliced red onion, and cilantro leaves. Set aside.

    Gently pound chicken to flatten slightly. Spread top of each breast half with 1 teaspoon sauce, and broil 3-4 minutes or until cooked through.

    Tear chicken into shreds with 2 forks by skewering with one and pulling the other. Heat shredded chicken with remaining barbecue sauce. Serve chicken on buns, topped with remaining barbecue sauce. Serve chicken on buns, topped with coleslaw.
    Makes 4 servings.
