    Bob Bogey Buddy Reuben Sandwich

    List of Ingredients

    1 cup mayonnaise
    1 Tbs. chili sauce
    1/2 cup sour cream
    1 tsp. minced pimento
    1 tsp. minced scallion
    2 Tbs. minced green bell pepper
    2 hard-cooked eggs, peeled and chopped
    1/4 cup chilled, drained sauerkraut
    2 slices dark rye bread
    1 Tbs. butter, melted
    2 thin slices Swiss cheese
    Thinly sliced Kosher-style corned beef brisket to taste
    Dressing to taste


    Recipe

    In a bowl, combine 1 cup mayonnaise, 1 tablespoon chili sauce, 1/2 cup sour cream, 1 teaspoon minced pimento, 1 teaspoon scallion, 2 tablespoons minced green bell pepper, 2 hard-cooked eggs and 1/4 cup chilled and drained sauerkraut. Mix well. Set aside.

    Brush 1 side of each slice bread with 1 tablespoon melted butter. Place, unbuttered sides up, side-by-side on cutting board. Top each slice with Swiss cheese. Pile thinly-sliced Kosher-style corned beef brisket to taste on one side only. Add dressing to taste. Put sandwich together and grill on both sides. Serve hot.
