    Cheddar Mushroom Open-Face Sandwich

    1 1/2 cups fresh, chopped mushrooms
    2 Tbs butter, melted
    1 large egg, beaten
    1 tsp oregano
    1 cup medium sharp cheddar cheese, shredded
    6 slices dark rye bread, toasted
    12 tomato slices, thinly cut
    Celery salt
    Parsley

    Recipe



    1. Saute mushrooms in butter until tender.

    2. Remove from heat and stir in egg and oregano.

    3. Stir in cheddar cheese.

    4. Spread about 3 Tbs of the mixture on each slice of toast.

    5. Top each piece of toast with 2 slices of tomato; sprinkle with celery salt to taste.

    6. Broil for 5 minutes, or until cheese melts and the sandwich is thoroughly heated.

    7. Garnish with parsley and serve.
