    Lasagna Melt Sandwich

    Source of Recipe

    Internet

    List of Ingredients

    1/4 cup Low-fat Sour Cream
    2 Tbs. Onion, finely chopped
    1/2 tsp. Dried Oregano
    1/4 tsp. Salt
8 slices Italian or Sourdough Bread
8 Turkey Bacon Strips, halved and cooked
    8 Tomato Slices
4 Slices Mozzarella Cheese or 3-4 oz. Shredded Mozzarella Cheese
    2 Tbs. Butter or Margarine

    Recipe

In a non-stick skillet over medium heat, cook turkey bacon as directed on the package.

Meanwhile, combine sour cream, onion, oregano, and salt in a small mixing bowl. Spread mixture on four slices of coarse bread. Top each of the four slices of bread with four turkey bacon pieces. Add tomato and cheese slices, or shredded Mozzarella cheese. Top each sandwich with remaining bread slices.

Melt butter or margarine in a clean skillet over medium heat. Cook sandwiches on both sides until the bread is lightly browned and the cheese is melted. Serve warm with a leafy salad or cold pasta salad, or both.

Kitchen Staff Tip: Use what you have in the fridge! So you don't feel like running out to the grocery store for a little turkey bacon? Use regular bacon instead. Hmmm, no bacon either. Try that pastrami in the back of the meat keeper of your fridge, it's fantastic! Got a little pepperoni saved for a rainy day? Use it now, it's great with the turkey bacon or plain boiled ham sandwich meats. Experiment, and enjoy this 10-minute meal-maker!
