    4 servings
    1 1/2 pounds cooked Tyson™ Fresh leg meat
    1/2 small white onion minced
    1 tsp. garlic minced
    2 tbsp. chopped cilantro
    1 tsp. fresh oregano
    1 tsp. fresh thyme
    1 tsp. cumin (toasted)
    1 tbsp. salt
    1/2 tsp. fresh ground pepper
    1 cup white vinegar
    1 1/2 cups water

    Recipe



    Combine ingredients. Simmer until tender and liquid is almost gone. Cut baguette into 4 and split open. Place chicken mix in. Add onion and cheese. Grill as if you were making a grilled cheese with a weight on it. Add salsa just before serving.

    4 thin slices red onion
    8 slices cheese (gouda or...
    2 tbsp. butter
    1/2 cup papaya mustard salsa

    Papaya Mustard Salsa
    yield: 3/4 cup
    1 tsp. coarse ground mustard
    1 tsp. dijon mustard
    1 tbsp. olive oil
    1 tsp. lime juice
    1 papaya, peeled, seeded and coarse chopped
    1 tbsp. red onion, minced
    2 tbsp. red pepper minced
    1 tsp. jalapeno, minced
    1/2 tsp. chopped cilantro
    1/4 tsp. salt
    pinch, fresh ground black pepper

    Combine. Refrigerate until ready to use. (1 to 26 hours.)
