    Smoked Salmon Quesadillas

    1 cup - mascarpone cheese
    1/4 cup - cream cheese
    2 - Roma tomatoes sliced thin
    4 - 8-inch flour tortillas
    8 ounce - sliced smoked salmon
    1 - red onion sliced thin
    2 teaspoon - light vegetable oil


    Whip mascarpone and cream cheese together. Layer 1/4 of tomato slices on 1/2 of each tortilla. Spread cheese mixture over tomatoes. Lay 1/4 of the sliced salmon over the cheese and place 1/4 of the onion slices on top. Fold unfilled halves of the tortillas over the fillings. Heat oil in skillet or coat nonstick pan with cooking spray. Cook quesadillas until golden brown on both sides. Cut each quesadilla into 4 sections.


    Yields 4 servings
