    Souvlakia in Pita Bread

    1 onion, chopped
    Souvlakia (recipe follows)
    1 tomato, chopped
    Tzatziki (recipe follows) OR 1 cup yogurt with 1/4 cucumber, sliced
    pita bread

    Slit pita bread on one side towards the top, or shape into a cone. Fill with Souvlakia as prepared above. Add onions, tomatoes, and tzatziki.

    SOUVLAKIA:
    Allow 1/2 lb. lamb, pork, or beef per person.
    Cut meat into cubes about 1-inch thick
    MARINADE:
    1/4 cup olive oil
    1 cup wine
    2 garlic cloves, crushed
    1 bay leaf
    1 tsp. salt
    1/2 tsp. oregano
    1/4 tsp. rosemary (optional)
    1/8 tsp. pepper, freshly ground
    juice of 1 lemon
    lemons, sliced in quarters (for serving)

    Combine olive oil, wine, lemon juice, garlic, bay leaf, salt, oregano, rosemary, and pepper. Marinate meat for two to three hours. Turn at intervals so all sides of the meat come in contact with the marinade.

    Thread the meat closely on 8-inch cane skewers (soak skewers in water before using).

    If broiling, place about 6-onches from heat for about 10 minutes. Turn frequently.

    If grilling or barbecuing, cook over hot coals. Turn frequently and baste with marinade.

    Serve with lemon wedges and pita bread.

    TZATZIKI:
    3 to 4 cucumbers
    1 onion, grated
    2 cloves garlic, minced
    salt and pepper to taste
    1 cup yogurt

    Peel cucumbers and grate. Place in serving bowl. Add onion and garlic. Toss. Salt and pepper to taste. Add yogurt. Mix well. Chill well before serving.
