Summer Squash Sloppy Joes

1lb ground lean beef or turkey
3/4c finely chopped onion
1 carrot, shredded
1.5c summer squash, diced
1 (6oz) can tmoato paste
3 garlic cloves, minced
1T mild chili powder
1t paprika
1t dried oregano
kosher salt & freshly ground black pepper to taste
cheddar cheese
hamburger buns or whole wheat dinner rolls(for extra fiber)
Recipe
Preheat broiler. In a large skillet over medium-high heat, saute' the ground beef or turkey until browned, about 7 minutes. Add onion and saute' 2 minutes. Add carrot and saute' 2 minutes. Add squash and saute' 1 minute. Stir in tomato paste and 1.5 cups of water, stirring until paste has dissolved. Add garlic, chili powder, paprika and oregano, and season with salt & pepper. Reduce heat to medium and continue to cook until the mixture has thickened 8-10 minutes. Place cheese to you liking on the bottom halves of buns. Place tops & bottoms of buns on cookie sheet and place under broiler so that cheese melts. Remove buns and top with meat-veggie mixture. Serves approx. 6
