    By pureeing this soup, you get a creamy taste without adding cream. Try it as an appetizer or with a sandwich or salad and crusty bread for a lunch or light dinner.

    List of Ingredients




    1 1/2 cups chopped celery
    1 cup chopped green onions
    3 carrots, chopped
    2 cloves garlic, minced
    1/4 cup uncooked brown rice
    5 cups chicken broth
    1/4 tsp ground cloves
    1/2 tsp dried thyme
    1/2 tsp dried oregano
    juice of one lime
    4 Roma tomatoes, diced
    1/2 cup chopped green onions or chives
    2 cups cooked chicken, shredded
    salt and freshly ground pepper to taste

    Generously coat a large saucepan with cooking spray. Add celery, 1 cup green onions, carrots and garlic and saute until softened. Add rice, chicken broth, cloves, thyme and oregano. Simmer uncovered, 30-40 minutes or until rice is fully cooked. Remove from heat and cool slightly.

    Puree soup in blender and return to saucepan. Bring back to simmer and add lime juice, tomatoes, green onions or chives and cooked chicken. Season to taste with salt and pepper. Serve with lime wedges and/or toasted corn tortilla strips.

    Serves 6
