    Creamy Tomato Comfort Soup

    1 sm Onion, finely chopped
    1 sm Carrot, finely chopped
    2 tb Butter or Margarine
    28 oz Can Italian-Style Tomatoes
    1/2 ts Thyme
    1/2 ts Basil
    Salt
    Pepper
    1 c Heavy Cream

    Recipe



    In a 2-quart pan over medium heat, cook onion and carrot in butter until
    onion is soft. Add tomatoes and their liquid, thyme, and basil; sprinkle
    with salt and pepper to taste. Bring to a boil; cover, reduce heat, and
    simmer for 20 minutes.

    In a blender or food processor, puree soup until smooth; return to pan.
    Whisk in cream. Heat through.
