    Fresh Apricot Fruit Bisque

    4 cups sliced pitted fresh apricots
    1 vanilla bean
    3 tablespoons all-purpose flour
    ¾ cup sugar
    ½ cup heavy cream
    2 cups milk

    1. Put the apricots, vanilla bean, and 5 cups of water in a large sauce pan over medium heat. Cook, uncovered, until the apricots are soft, about 10 minutes. Meanwhile, whisk the flour, sugar, and cream into a smooth paste in a small bowl.

    2. Remove and discard (or reserve for another use) the vanilla bean. Stir the flour paste into the apricots and continue cooking over medium heat until the mixture thickens somewhat, about 10 minutes. Stir in the milk. Remove from the heat and let cool slightly; alternatively, refrigerate, covered, for at least 2 hours to serve chilled. Ladle the fruit soup into glass bowls, and serve.

    Serves 4-6.
