    Herbed Lentil and Potato Stew

    1 onion, chopped
    1 clove garlic, minced
    1 teaspoon of olive oil
    1 teaspoon of marjoram
    1 teaspoon of thyme
    1 large potato, chunked
    1 cup of brown lentils, picked over and washed
    1 can of tomato paste
    1 large can of tomato soup
    2 cups of water

    Sauté onion and garlic in oil in large pot. When onion is soft, add herbs. Add potatoes, lentils, tomato paste, juice and water. Bring to a boil. Lower heat and simmer 1 hour, covered, or use a pressure cooker, bring to pressure and simmer 40 minutes.
