    Kinky Freidman's Spicy Chicken Chili

    4 large chicken breasts, large diced
    ½ tsp. garam masala
    ½ tsp. salt
    1 tbsp.. canola oil
    2 garlic cloves
    2 c. chicken stock
    Juice of 1 lemon
    2 tomatoes
    2 oz. black olives
    1 small orange
    small bunch fresh cilantro
    hot chili sauce

    Recipe



    Mix together the spice and salt and sprinkle over the chicken. Heat oil in a large sauté pan, and cook the chicken for 2-3 minutes on each side until golden brown. Add garlic, hot chicken stock, and lemon juice. Roughly chop the tomatoes and add to the pan with the olives then simmer gently for 10-15 minutes. Stir in chopped cilantro. In another sauté pan, heat oil. Slice orange and cook in the hot pan for a few seconds on each side until lightly charred. Spoon chicken chili in a bowl, then top with sautéed orange slice. Crispy pita triangles are an option.


    TIP: Choose olives by flavor, not by size. Always pit olives before putting them in food.
