    2 cups diced raw potato
    1/2 cup chopped celery
    2 1/2 cups boiling water
    3/4 cup chopped onion
    2 1/2 tsp salt
    4 tbsp butter 4 tbsp flour
    1/4 tsp pepper 1/2 tsp dry mustard
    2 cups milk 1 1/2 tsp HP sauce
    1/4 lb cheddar cheese (grated)
    1 (28 oz) can diced tomatoes

    Recipe



    1 Place first 5 ingredients in large saucepan or dutch oven and cook until just tender.
    2 In large frypan, melt the butter.
    Combine flour, pepper and dry mustard.
    Stir into melted butter. Cook until bubbly.
    3 Add milk and HP sauce.
    Stir constantly until thickened.
    Remove from heat and cool slightly.
    4 Add grated cheese and stir until melted.
    5 Combine cheese sauce to the undrained vegetables.
    6 Add diced tomatoes.
    7 Heat to serve.
