    One 12 ounce can of luncheon meat, cut into strips
    1 tablespoon of oil
    1 large onion, chopped
    One 10 ounce package of frozen cut okra
    One 16 ounce can of tomatoes, broken up
    1 cup of chicken broth
    1/2 teaspoon of salt
    1/8 teaspoon of pepper
    1 bay leaf

    In a large skillet brown meat in hot oil. Add the onion; cook until tender. Next add the okra, tomatoes, broth and seasonings. Cover and bring to a boil. Reduce the heat, uncover and simmer 10 minutes or until okra is tender and liquid slightly thickened. Discard bay leaf. Makes 4 servings.
