    2 teaspoons olive oil
    1 package (14 ounces) Turkey Smoked Sausage, cut in 1-inch pieces
    1 medium onion, chopped
    1 medium red bell pepper, seeded, fine chopped
    3 cloves garlic, minced
    1 can (14 ounces) Diced Tomatoes, drained
    1 can (15 ounces) black beans, rinsed and drained
    2 teaspoons Chili Powder
    hot pepper sauce, optional
    2 cups hot cooked rice*

    Recipe



    Heat the oil in a large skillet or Dutch oven over medium-high heat. Add the sausage and saute 5 minutes or until browned, stirring frequently.

    Add the onion, red pepper and garlic. Saute 7 minutes or until onions are tender.

    Add the tomatoes, beans, chili powder, salt, and pepper.

    Reduce heat, cover and simmer 10 minutes. Season with salt and pepper, if desired. Sprinkle with hot sauce, if desired. Serve over hot rice.

    *For an even healthier dish, use brown rice instead of the white to incorporate whole grain and fiber into your meal.

    Makes 4 servings
