    2 cans black beans, rinsed and drained
    1-1/2 cups frozen corn, thawed
    1 red pepper small, diced
    6 green onions with tops, chopped
    2 tomatoes medium, chopped
    1/2 cup fresh cilantro, chopped
    1 fresh chili pepper, chopped (optional)

    Dressing:
    1/3 cup fresh lime juice
    1/8 teaspoon cayenne pepper
    1 teaspoon thyme
    1 teaspoon basil
    1 pinch sugar
    1 clove garlic, minced
    1/2 cup olive oil
    salt and pepper to taste

    Recipe



    Cook corn according to package. Combine dressing ingredients in a small bowl, adding salt and pepper to your taste, and whisk briefly. Combine all other ingredients in a salad bowl. Pour on dressing and mix. Refrigerate before serving. If you cook fresh corn, this recipe is even better!

    This dish can be served as a vegetable or a main vegetarian course.

    Serves: at least 8.
