    Carlos Beltran's Tortilla Salad

    1 (16-ounce) package unsalted corn chips
    2 (12-ounce) jars salsa, mild or medium; or 3 cups fresh homemade salsa
    1 bunch cilantro, minced
    8 ounces shredded Monterey Jack cheese
    8 ounces shredded sharp Cheddar cheese
    Salt, to taste
    1 cup sour cream
    3 limes, cut into sections
    2 avocados, peeled and cut into chunks

    Recipe



    Toss together corn chips, salsa, cilantro and cheeses. Taste, add salt if needed. Toss again. Squeeze a little juice from cut lime onto avocados to prevent discoloring. Add to salad, toss. Serve with sour cream and remaining limes on the side.

    Makes about 10 servings.
