    Layered Casserole & Pea Salad

    List of Ingredients




    1 cup uncooked rice
    1 can (15 oz) tomato sauce
    Enough water to combine with tomato sauce to equal 2 cups
    1 can corn, drained
    1 can green beans, drained
    1/2 cup chopped onion
    1 pound hamburger
    4 strips bacon chopped fine
    salt & pepper to taste

    Recipe



    Place rice in the bottom of a casserole dish. Pour half of the tomato sauce mixture over the rice. Add a little salt & pepper. Layer the corn, green beans, onion, and hamburger. Pour the remaining tomato sauce over the hamburger. Sprinkle bacon on top. Cover tightly and bake 1 hour @ 350 degrees. Uncover, lower heat to 300 and bake for 1/2 hour longer.

    Pea Salad
    1 package frozen peas - thawed
    1/4 to 1/2 cup minced carrot
    1/4 to 1/2 cup minced celery
    1 cup mayonaise
    1 white onion - chopped

    Mix peas, carrots, and celery in a bowl. Put the mayonaise and onion in a blender (VitaMix works great) and thoroughly blend. Pour onto the vegetables and mix well. Chill well before serving.
