    Mediterranean Tuna Salad

    3 Cans (6 1/2 oz.) Water packed tuna, drained and flaked
    1/2 Lb. Low-fat dill Havarti cheese, cut into 1/2-inch cubes
    1/2 C. Pitted black olives, thinly sliced
    2 packages (8 oz.) Fusilli, cooked according to package directions
    1 C. Thinly sliced scallions, including green tops
    1/2 C. Finely chopped red pepper
    1/2 C. Thinly sliced green pepper
    Zest from 1 lemon
    1 bottle (8 oz.) Italian salad dressing
    8 Lettuce leaves, washed and patted dry

    Black pitted olives, for garnish

    Recipe



    Combine all ingredients in a large bowl. Toss to combine. Let stand for 15 minutes. Serve on a lettuce leaf. Garnish with olives, if desired.

    Yeild: 8 Servings.
